Cookies and cannolis and cakes, oh my! Enchanted Cookies and Cakes, 504 Frontage Road, will open its new retail store on Jan. 5. The company, however, has been located in Rio Rancho for the past four years. “We are a wholesale manufacturer of baked goods so we’re taking orders but the retail portion isn’t up yet,” said manager Cid Carmona.
The 7,000 square-foot building has undergone some remodeling to add some display cases, refrigerators and even cake consultation room to the front of the building. “It’s a high-tech consultation room,” Carmona said. “We have a big flat screen TV on the wall with a computer program that designs the wedding cake. A cake consultation will take the wedding party through the process and design the cake in front of them. They can print out a copy and once it is approved, we give it to our decorators to make.”
But, you don’t have to get married to enjoy the gourmet desserts from the bakery. The bakery, which has six bakers, eight decorators and six other employees, offers cookies, doughnuts, turnovers, danishes, éclairs and any other pastry imaginable. “One of our trademark cookies is the bizcochito,” Carmona said. “We have gourmet bizcochitos as well as bizcochitios with flavors like cheesecake, strawberry, cran-raspberry and eg nog bizcochitos for the holidays.”
The bakery also has cookie packages and cookie towers that range from $14.99 to $49.99. The cookie towers start with chocolate chip cookies on the bottom, bizcochitios in the middle and are topped with decorated sugar cookies in the shapes of snowflakes and ornaments for the holiday season, Carmona said.
Although the retail section of the bakery is not in full swing and there are no signs on the building until January, local cookie fiends are welcome to call and place an order.
“Whoever has a sweet tooth and like quality baked goods will be welcome at our bakery,” Carmona said.
